· 2 lb Pork loin Or Beef tenderloin
· 2lb sweet potato
· 1 Westside Hot Honey sauce ¾ (6oz)
· Salt and Pepper
· 1 Tablespoon olive oil for Cooking
· 1 Teaspoon fresh sage
Preheat the oven or your BBQ to 375 degrees F (190 degrees c), lightly score the pork loin 2lb fat/cap skin with cross marks.
Season with salt and Pepper and marinade it with 6oz of Westside Hot Honey sauce for a minimum 30 mins(Overnight is best).
Once oven is to temp put the pork loin in and roast for about 50mins-1hr until inner temp is 150 degrees F (65 degrees C).
Cut the sweet potato in chunks and boil for 15mins. Once cooked drain water and season with olive oil salt and pepper. Add to the roasting tray.
Additionally, Once cooked keep the juice from the roasting tray, add fresh sage and cracked black pepper to use as a gravy.
